Coffee Brewing (#)
„To brew coffee in a drip brewer place a thick paper filter in the brewing cone (basket) and wet thoroughly with water. This helps remove the paper taste from the filter. Then freshly grind the coffee using a medium grinder setting.“

„In filter and drip systems, avoid brewing less than the brewer's full capacity. If the pot is made to brew six cups, the coffee will taste better if you brew the full six.“

„There is no such thing as a 'fast' coffee brewer. A good drip brewer will turn out 4 to 6 small mugs of hot coffee in about 5 to 7 minutes. Why, you ask? The ideal rate of extraction and the brewing temperature are kind of tied together.“

„Espresso is not a particular type of bean - this is a very common misconception. Espresso is really just a method of brewing coffee, just like making coffee with a French press or drip brewer are each considered a method. Espresso is coffee being prepared one cup at a time, with the result being highly concentrated. It is the process of hot, pressurized water being forced through finely ground coffee to draw out flavor compounds.“

„Fundamentally, they make coffee as any other brewer does: by steeping ground coffee in hot water. The difference is the pressure applied to the hot water. In normal drip brewing processes, the water seeps by gravity down through ground coffee, loosely spooned into a filter.“

„The other surviving schools of coffee making were the English Biggin and the French Press. Both fine, non pressurized brewing methods that survive today as the drip cone and of course the French Press. As they rely on a long saturation period without the use of pressure, extra acids are leeched into the brew, which attack the unstable aromatics flavor compounds and sort of erase them.“
