Coffee (#)
„This is usually a mix of arabica beans but may also include some robusta beans to give unusual flavor nuances to their espressos. The bean designated for an espresso is roasted just slightly longer than regular coffee beans so that the rich oils in the coffee are brought to the surface the bean. It is a surprise to most people to learn that this dark roast contains less caffeine than lighter roasts because the espresso process, hot water passing swiftly through ground coffee, leaves more caffeine in the grounds and less in your demitasse.“

„I don't like too strong of a flavor in my coffee, so I prefer a well flavored coffee blend over using syrups, Although syrups do have there place in a good drink.“

„Ok, here's my question. I bought some whole bean coffee from a major, national coffee house (don't know if I can say their actual name but anyway). I bought the espresso roast bold flavor. When I pulled a shot it tasted burnt - like someone had a lighter and lite a coffee bean on fire and let it burn for a while, grounded it up and then put it in a espresso machine.“

„To maximize flavor in the cup refrain from grinding until the last possible moment. Some coffee makers have built-in grinders so that, as soon as the bean is ground, the brewing begins. If you have a stand-alone grinder we suggest having it positioned near your coffee maker. Prepare everything else ahead of time and then, at the last moment, grind your beans and start brewing.“

„To begin with, we highly recommend you grind your own beans just before brewing. The coffee bean acts like its own container, holding in flavor and aroma.“

„Four of the most famous coffees by district are SanMarcos de Tarrazu, Tres Rios, Heredia, and Alajuela. Altitude may be a more importantfactor in determining flavor than district; strictly hard bean indicates a Costa Ricancoffee grown above 3,900 feet; good hard bean from 3,300 to 3,900. Unlike many coffees ofthe world, Costa Rican growths generally are identified either by the estate or farm(finca) on which they were grown, or by cooperative or processing facility (beneficio)where they were processed. This piece of information, which is usually available to theroaster or importer, is seldom passed on to the consumer except in the case of well-knownestates like Bella Vista or La Minita.“
