„Making eggspresso only requires a good steam wand. Most home espresso machines have good decent frothing wands with which to cook the eggs. Next, you will need a good container to put the eggs in. Oddly enough, I have found that coffee mugs work very well because you can fit 3 eggs in them and they have enough depth for the wand to reach into.“

„Next thing to do is to drop your steaming wand just to below the surface of your milk and let loose - start steaming! For the first few seconds (roughly 20 on cheaper machines or stovetop devices, maybe 5-10 seconds on more powerful machines) you want to hover the tip of the steamwand just at the surface of the milk so you get a deep and rapid rumbling sound - the sound of milk being foamed. During this first stage, you should be generating about half your total foam volume - set that as your target, along with a 100F temperature by this point. Remember to always lower the pitcher as you steam to keep that tip right near the visible surface - this is called "stretching the milk".“

„Ingredients (2 servings): 1/3 of just made espresso coffee 2/3 of froth Preparation:Fill a small jug to 1/3 of its capacity with fresh milk. Immerse the frothing arm found on all electric espresso machines just below the surface of the milk. Turn on the steam and gradually lower the jug, allowing the milk to froth up while still keeping the froth arm just below the surface. Add a half of the froth into the espresso coffee.“
