„The original javas and mochasin fact, all important coffee at one timewere arabicas. But Mocha has practically gone out of business, and Java was forced long ago by mass destruction of its arabica plantings from leaf rust to substitute more disease-resistant robustas. Nowadays, some high-grade arabicas are called java and mocha even though they may be grown elsewhere.“

„Mocha-Java, Moka-Java, Mocca-Java. Traditionally, a blend of Yemen Mocha and Java Arabica coffees, usually one part Yemen Mocha and two parts Java Arabica. All commercial Mocha-Java blends and many specialty versions no longer follow this recipe. Commercial blends may combine any of a variety of round, full coffees in place of the Java, and any of a variety of bright, acidy coffees in place of the Mocha, while changing proportions to maintain a uniform taste.“

„I found out recently I'm not the only espresso snob in my house. I make an ice blended mocha for my 17 year old stepson, and formerly thought he didn't notice the difference when I used fresh stuff, or the older beans in my supply, or store bought beans my wife uses, which are always stale and sometimes too dark for my taste.“

„One good illustration of the issue is the traditional Mocha-Java blend, which is a combination of a bean that originated in Yemen (Mocha), and beans from the Indonesian island of Java. Though well known you will never find a cup of coffee brewed only from Mocha beans it just doesn't have all of the qualities necessary to stand on its own. Java, on the other hand, was once so well known on its own that it became nearly synonymous with coffee.“

„There is little name regulation in the industry which leads to confusion and worse, purposeful misinformation. The widespread use of names like Kona, Kona style, Java, and Mocha has to stop some day. Someone must put their foot down and state that coffees calling themselves Kona style must have at least 90% of Kona coffee in them, and only coffees from Yemen can go by the name Mocha.“
