Cheap Commercial Grade Coffees, and Educational Experience for Home Coffee Roasters

Cheap Commercial Grade Coffees, and Educational Experience for Home Coffee Roasters ()

„I was sitting around with a bunch of roasters and coffeeshop owners, bemoaning the low coffee market prices, how it hurts farmers, lowers coffee quality, and ultimately hurts the entire coffee trade. Some people profit in the short term, but these are big companies that use coffees actually priced at New York "C" market levels. When the coffee market dips, their retail prices don't follow. As a group, the roasters and cafe people I was chatting with hadn't dropped prices much either, because we don't buy cheap coffee, and we don't pay low prices.“

„By supporting Fair Trade Certified coffee, Seattle consumers, roasters, and retailers are ensuring that small family farmers are able to feed their families, keep their children in school, build community health clinics, and safeguard the environment for future generations." While world leaders remained deadlocked over socially responsible trade practices at recent meetings in Quebec, Seattle consumers and coffee companies have been forging ahead with support for Fair Trade Certified, organic, and shade-grown coffee. Seattle-based industry giants like Starbucks, Tully's, and the Seattle Coffee Company now offer Fair Trade Certified coffee brands as one way to support the family farmers they depend on for the highest quality coffee -- and to keep their discerning consumers satisfied. In a city famed for its specialty coffee and its socially conscious consumers, public support in Seattle has been critical to the success of Fair Trade and other sustainable coffees. Fair Trade is an innovative approach to empowering Third World farmers through direct trade, fair prices, access to credit, and sustainable farming methods.“

„Most roasters buy coffee through chains of brokers, selling it as a blend. With little incentive to keep their products separate, farmers take their coffee to local mills to be mixed with that of their neighbors. Shaded, unshaded -- it all goes in the same bag. "Folgers buys coffee from Guatemala," Ted Lingle says.“

„It is a universal means of evaluating coffee, universal because, everyone from the farmers to the baristi tastes coffee by means of cupping. Most roasters and green coffee buyers use this more or less as a tool to control consistency in their product, a somewhat dry definition. I have yet to meet a roaster or coffee buyer who describes it in such bland terms. The rapid slurp from a cupping spoon, allowing the aromatics of the coffee to spread over your tongue by means of oxygen and moisture, gives you a picture of how this coffee has developed.“

„Through Cooperative Coffees, 15 North American roasters combine their resources to purchase beans from small farmers who combine their harvests to sell in bulk. Much of the business is taken care of personally at annual meetings between the co-ops. In this way, Cooperative Coffees and other fair trade organizations build long-term relationships with farmers that both parties can depend on.“
