„Portafilter Sneeze: on pump and piston espresso machines that do not feature a pressure release system, removing the portafilter too soon after brewing a shot can result in the instant release of pressure in the brewhead, causing extremely hot and wet coffee grinds to spray and cause potential injury. When you complete the brewing of an espresso shot, some of the 135 PSI of pressure remains in the portafilter, and normally takes 30 seconds to a minute or longer to bleed off, allowing safe removal of the portafilter.“

„In order to achieve a flavorful cup, you may have to use more. I find that with many home pump and piston machines a single serving of brewed espresso with the proper richness only can be obtained by using the double filter basket rather than the single, and by loading it with a double dose of ground coffee.“

„Additional temperature stabilization efforts include a thick brass endplate for the boiler that serves as a heat sink. So what we have here is the best effort at producing an espresso machine for the home with professional machine engineering. And, they have succeeded. The Coffee The shots I brewed were thick and a deep red brown.“

„ I would not personally own a machine unless it had this list of features: A cast brass boiler instead of aluminum; a brass steam valve that was carefully machined to operate smoothly; a preponderance of brass and copper tubing instead of aluminum or plastic; at least 1,000 watts of heating power; and an exterior finish that reflects the same quality as the rest of the componentry. If I get a chance to demo a new unit I try to discern these things: how long it takes to come to operating temperature; if the water will remain reasonably hot during the length of the pour; how difficult is it to change to steam mode and how long does it take to produce useable steam pressure; and how long the machine takes to recover from steam mode back to brewing. Here’s the Most Important Question: * Do you like the coffee it makes? * How do you know?“
