„The evidence for caffeine withdrawal, tolerance, reinforcement and dependence has been reviewed recently (9, 10). It was concluded that “A withdrawal syndrome to caffeine has been described which does not seem to relate to the quantity of caffeine ingested daily” (9) and that “Withdrawal symptoms, although relatively limited with respect to severity, do occur, and may contribute to maintenance of caffeine consumption” (10). “In humans, tolerance to some subjective effects of caffeine as well as partial tolerance to sleep seems to occur, at least in some individuals” (9). “In humans, the reinforcing stimuli functions of caffeine are limited to low or rather moderate doses that are usually present in a classical serving of coffee or soft drink” (9) and “Caffeine has weak reinforcing properties, but with little or no evidence for upward dose adjustment possible because of the adverse effects of higher doses” (10).“

„Criteria used for making diagnoses (and rates of their prevalence) were as follows: withdrawal (94%), use continued despite knowledge of a persistent or recurrent physical or psychological problem that is likely to have been caused or exacerbated by caffeine use (94%), persistent desire or unsuccessful efforts to cut down or control use (81%), and tolerance (75%). Eleven subjects underwent the double-blind caffeine-withdrawal evaluation portion of the study, and nine (82%) of the 11 showed objective evidence of caffeine withdrawal, including eight of 11 with functional impairment. CONCLUSIONS--These results, together with other experimental evidence, suggest that caffeine exhibits the features of a typical psychoactive substance of dependence. It is valuable to recognize caffeine dependence as a clinical syndrome, since some people feel compelled to continue caffeine use despite desires and recommendations to the contrary.“

One explanation for these individual differences is that habitual consumers of caffeine are less likely to report sleep disturbances than infrequent consumers of caffeine (5). Caffeine is addictive, it's true-- research shows that, although humans seem not to develop tolerance to caffeine (ie do not need more and more, over time, to get the same results, unlike, say, heroin) it does appear that caffeine does cause dependence in humans. This means that the body becomes used to receiving a certain amount of caffeine at regular intervals and temporary effects, such as headache or fatigue, will be apparent each time caffeine is not received when the body expects it. These symptoms are, however, short-lived and usually disappear in several days. Slowly tapering off consumption of caffeine will minimise these effects.“

CAFFEINE REMOVAL occurs in an extraction vessel, which may be 70 feet high and 10 feet in diameter, suffused with carbon dioxide at roughly 200 degrees Fahrenheit and 250 atmospheres. Caffeine diffuses into this supercritical carbon dioxide, along with some water. Beans enter at the top of the chamber and move toward the bottom over five hours. To extract the caffeine continuously, the beans lower in the column are exposed to fresher carbon dioxide, which ensures that the caffeine concentration inside beans is always higher than in the surrounding solvent.“
