„Mujeres jóvenes son las encargadas de llevar a cabo esta crucial inspección y descaratar los granos de inferior calidad. A partir de ese momento, los ricos granos de color verde oliva están listos para ser embolsados y sellados para exportación. Luego de este largo proceso, la Federación otorgará su sello de aprobación. Sin embargo, antes de que las bolsas sean selladas, otra muestra aún es extraída, pesada y calificada. Esta muestra de café es tostada, molida, y finalmente degustada en una taza de café debidamente preparada.“
