„Dark Roasts -- shiny black beans with a oily surface and a pronounced bitterness. The darker the roast, the less acidity will be found in the coffee beverage. Dark roast coffees run from slightly dark to charred and the names are often used interchangeably which can be very confusing. Be sure to check your beans before you buy them!“

„I suspect the roasters chose this slightly darker roast style to mute or round out the powerful acidity of these coffees. The remaining four coffees were brought to a considerably darker roast, a style that many stores might call espresso or French, but which apparently represents the normal roast style for these coffees when you buy them at New York's Oren's Daily Roast or Seattle's Caravali.“

„Dry-processed coffees will have a low-toned and subtle acidity. It is important to note that as the roast develops, acidity decreases. Acidity is not a favorable quality in high amounts in espresso. For this reason most American roasters will roast espresso very darkly. Unfortunately at darker roasts the aroma and sweetness diminish, which is equally detrimental to the espresso.“

„They have a healthy dose of pungent spice, tarry astringency, and a touch of earth; but they also have a nip of brightness to balance the cup, butterscotch roast tastes, and an unmistakable fruitiness that ties the bright end of the cup together. Actually, I am describing a specific coffee that I am now enjoying: the Sumatra Mandheling DP (dry-process) Super Prep. It's a smaller bean size than the Iskandar, but every bit as perfect with dark opalescent color. The flavors on the palate are excellent and you can really roast this quite light if you like (I do): the coffee will look unattractive and mottled in color if you stop it short of any sign of 2nd crack, but rest it 24 hours and enjoy ALL the true complexity of flavors in a Sumatra!“
