„I suggest you head to your specialty coffee purveyor and select from their coffees. Many of us have purchased the supermarket brands of pre-ground or whole bean coffees. The problem with these coffees is you can never be too sure how long the beans sit in those chutes and, as you know, exposure to air is an enemy of freshly roasted coffee beans. I recommend your specialty coffee purveyor, not to discredit your friendly grocer, but because specialty coffee retailers are solely in the business to sell coffee beans and therefore you can be more confident their beans are fresher because they move much more rapidly than supermarket beans.“

„“Many of the equipment companies that we’ve been working with have simple coffee brewing machines that are very inexpensive,” he says. “Some of them are under $200, where you can use the stainless steel carafe; you pull the basket out of the unit and the carafe fits right in there with our infuser and it brews right into the carafe. So for around $200, you’ve got an automatic tea brewing system. That’s the best, it’s really cool.“

„As it turns out, we end up getting a free replacement brewing boiler out of the deal. There's corrosion where the brew groups attach to the boiler and ESI is offering free replacements to the new boiler style for any machines less than five years old. As of March or April 2003 they went to a stainless steel brew group that's welded on rather than the old nickel plated brass style that is bolted on. Bad news is there doesn't appear to be any way at present to do a Schomer mod on the new boiler style (not that I've heard of anyway) but I don't' think I could talk the owners into the mod anyway.“

„If you've only been drinking Toddy coffee you're limiting yourself. Each brewing process creates a different result, just as each coffee has its own unique characteristics. I suspect that your dinner guests rave about it because they've not had properly prepared and served coffee, so they don't know any better. Toddy coffee does produce a consistent, easy to consume product.“
