„Second choice for coffee brewing would be a gold filter, since this filter doesn't remove any flavor from the coffee, as would be the case with a paper filter. Paper filters have a tendency to filter out coffee oils and grounds as well as flavor, plus your cup tends to pick up a bit of the paper's taste. Once brewed, coffee should not sit over heat for more than thirty minutes; any longer and you lose flavor at a rapid rate. „It does let you down in terms of being a "cappuccino machine", because of a long draw time between brewing and steaming (I do not recommend steaming first, then cycling the machine down to brew a shot - it takes almost as long, and can use half a reservoir of water in the process). But with that said, the actual steam performance of the Zaffiro was superb once the machine is heated up properly.“

„Fundamentally, they make coffee as any other brewer does: by steeping ground coffee in hot water. The difference is the pressure applied to the hot water. In normal drip brewing processes, the water seeps by gravity down through ground coffee, loosely spooned into a filter.“

„Manual pour-over drip brewing with Chemex or a filter cone work well, as does a French Press . But most people in our fair land brew their coffee in electric coffee makers, and ironically, most of them can barely brew a decent cup, or fail miserably (I am talking about the machines, not the people using them)! Cheap drip brewers invariably fail to brew coffee at the correct temperature. When coffee is brewed at a low temperature (most home electric drip brewers reach only 185 degrees) the result is a dullness of the higher, more vivid cup tones, and incomplete extraction of the coffee flavors overall.“
