„Once roasted and ground the coffee is ready for brewing. The simplest method in the 19th century was to pour hot water into a pot with coffee grinds. The problem was separating the coffee grinds from the liquid coffee. Elisabeth Dakin took a standard coffeepot and put a perforated cylinder - similar to a sieve - in the middle, into which she put a plunger on a screw thread.“

„Careful - you may feel a bit dizzy, but this is in fact perfectly legal. When the kettle has boiled, pour a little of it into a tea pot, swirl it around and tip it out again. Put a couple (or three, depending on the size of the pot) of tea bags into the pot (If I was really trying to lead you into the paths of righteousness I would tell you to use free leaves rather than bags, but let's just take this in easy stages). „The method was fairly quick since the pot didn't hold more than 3-4 small cups of coffee but be prepared to experiment with the grind of your beans until you can determine the perfect grind to allow for the water to drip into the compartment at the proper speed. Now that I am more familiar with the correct brewing procedures, I believe the boiling water was not the best temperature for making coffee. To control this, you'll need to experiment and time the water to just before it boils and follow this guide for a good cup of coffee.“

„Pour it into a warmed mug or coffee cup so that it will maintain its temperature as long as possible. Brewed coffee begins to lose its optimal taste moments after brewing so only brew as much coffee as will be consumed immediately. If it will be a few minutes before it will be served, the temperature should be maintained at 180 - 185 degrees Fahrenheit. It should never be left on an electric burner for longer than 15 minutes because it will begin to develop a burned taste.“
