In fact, small-grower Sumatra arabicas are wet-processed (the bean is only dried after the fruit has been entirely removed). However, the wet-processing is done in small batches by hand and the fermentation stage is dry (no water added to the pulped beans) rather than wet (water added) as in most conventional, large-scale wet processing.“
