„This allows many items to heat nice and evenly and not boil over if a watchful eye is not kept closely on them and the pan is too small or scald because the pan is too big. The lid fits on with a nice tight seal, it fits even better than my older Farberware pans of this sort. You cannot go wrong with this pan, for sure! The hook on the handle is great if you have a pot rack.“

„The process is a good one because it is fairly fast and quite easy, taking only the time it takes to boil the water then four additional minutes to steep, the coffee is never boiled, the grounds all get brewed exactly the same amount of time, and the grounds are totally exposed to the water for an extended length of time as opposed to a drip machine where the water gets one trip through the grounds and that's it. The negatives are minimal- some amount of fine grounds end up in the cup and there is a bit of a clean-up to deal with in cleaning out the pot and the strainer.“

„Situate cookie sheets in relation to bean-charged pans so as to break up pattern of hot spots revealed by previous roast sessions. In other words, if beans in middle of roasting pan emerge darker than beans at sides, position cookie sheet directly below roasting pan. If darker beans are at back of pan, position cookie sheet somewhat farther back in oven than roasting pan, etc. If beans take longer than 15 minutes to reach a medium roast or 20 minutes to reach a moderately dark (espresso) roast, or if they taste bland or flat, start with higher temperature on subsequent sessions.“
