  „However, she's kept to the spirit of history, so Vegetable and Bean Barley Soup doesn't contain tomatoes, as those were imported from the Americas after Columbus visited. Her food-related tidbits are just as appealing as the food itself: Pythagoras eschewed beans because they were associated with bureaucracy (hence the expression "bean counter"), and Hippocrates suggested getting drunk and engaging in sex to heal sore muscles. While in many books a final chapter with menus is almost a throwaway, Segan makes the most of hers by discussing the philosophy of entertaining in ancient times and offering sample invitations with appropriate quotes for a New Year's Eve Bacchanal, Plato's Birthday and other occasions. This attention to detail and user-friendly attitude are typical of this excellent book as a whole.“

  „ I'm working phenominal "miracles" with coffee, but I never thought about soup.  Even my espresso brownies were the life of the party - so I thought I'd investigate.  There doesn't seem to be a single reference on the Internet, so I guess I'm not seeing something obvious.“

How to Stereotype Roasters (INeedCoffee.com) How to Stereotype Roasters (INeedCoffee.com)

  „Even if you plan to grind at home, use this test to stereotype the quality of the entire coffee operation. Same Style Of Roasting Does every coffee bean at the roaster look like French roast? A skilled roaster will know that every crop has a sweet spot; some beans are best when roasted lighter and some best when roasted dark. A Colombian may excel at a Vienna Roast, but roasting Ethiopian Yirgacheffe that dark is a crime.“

  SCAA Politics: For all the good the SCAA does (and they do a LOT of it), I do see elements of where politics and to a lesser extent, bean counting (sometimes given precedence over bean loving and promotion) can rule the day. I worry that the SCAA may forget one day the grass roots it came from; the pursuit and promotion of specialty coffee, and the increasing awareness of coffee as a quality beverage in the American (and world) eye. This includes social and ethical issues, which are intrinsic to the promotion and sustainability of quality coffees. Many of the people within the SCAA want to promote specialty coffee to the hilt, but sometimes politics, political correctness, and maybe even a lack of forward thinking can and do hamper this.“

:: Roast :: :: Roast ::

  „Depending on the bean, its origin and the effect you want to achieve, roasting typically takes place between 190 and 220°C - for 10-18 minutes. Does this make it sound like roasting is some sort of exact science? Well it's not. We like to think of it as more of a black art - which is why each and every batch has to produce a real, live cup of coffee for testing by one of our real, live experts.“

  „Robusta beansdo not fall to the ground once they ripen, hence it does not need to be harvestedimmediately. This species is normally purchased as a 'filler' bean for canned coffees toreduce the roasters cost. Robusta has twice the caffeine content of Arabica. In fact,Robusta takes less time to mature, typically half the time needed for Arabica beans, andtend to yield twice as many cherries.“
