„Green teas are not oxidized, but are formed into different shapes either by pan firing by hand (China) or by steaming (Japan). They are then sorted by size and quality into different grades, the higher grades having a fuller and more complex flavor, and often are able to be steeped more times than the lower grades. China produces the greatest number of these, including the chestnutty Long Ching (Dragon Well), the fruity and fragrant Pi Lo Chun (Green Snail Spring-- much better than it sounds, one of my favorites), the mild, lightly sweet Chun Mei (Precious Eyebrows), and the strong and smoky gunpowder, among hundreds of others.“

„Scientists in Sweden say they have discovered why green tea, a popular drink in China and Japan, has a protective effect against some forms of cancer. A report by researchers in Stockholm, published in the scientific journal 'Nature', says that a substance in green tea slows down or stops the growth of new blood vessels. A BBC science correspondent says that as cancer tumours are dependent on a constantly growing network of blood vessels to supply them with food and oxygen, they will shrink and may even disappear, if the network stops growing. He says its now clear why moderate consumption of green tea can be beneficial.“

„Unlike other kinds of tea, green teas do not take well to boiling water, but do best with water in the range of 175°-190°F. Japanese green teas tend to take water best 175°-180°F; China green teas tend to taste best at 185°-190°F. To brew green tea without a thermometer, pour the water just at the moment that bubbles begin to rise from the bottom of your kettle, or bring it to a boil first and then let it cool for two to three minutes before pouring. It's important to have a dedicated teapot for green teas, so as not to cloud the flavor with residue from steeping black tea.“
